My husband and I love cupcakes! And today he surprised me with my very own mini cupcake mold that he bought this morning. He knows the way to my heart
Anyways, I made these cupcakes for the first time and we both loved it!

Ingredients:
Cupcake:
1/2 cup sifted coconut flour
1/2 tsp sea salt
1/4 teaspoon baking soda
6 eggs
1/2 cup of coconut or palm oil
1/4 cup of maple syrup (you can also substitute with honey)
1 tablespoon vanilla extractChocolate Frosting:
1/2 cup of dark chocolate
1/2 cup palm shortening
3 tablespoons maple syrup (you can add more if you like it super sweet)
1 tablespoon vanilla extract
pinch sea salt
Instructions:Preheat the oven to 350 degreesIn a medium bowl, combine coconut flour, salt and baking soda. In a small bowl, blend together eggs, coconut oil, maple syrup and vanilla.
Mix wet ingredients into dry and blend with a mixer or hand blender until smooth.
*The cupcakes don’t rise a whole bunch, so you want to fill them a little more than 2/3 of the way when using muffin tins or liners.
Bake mini cupcakes for 12 minutes or regular cupcakes for 20 minutes Make sure to set the timer and just kept a close eye on them.
Chocolate Frosting Instructions:
Chop dark chocolate up and place into a small saucepan
Pour out half cup of coconut oil and mix with chocolate in saucepanHeat over low heat until melted and blended. And let is sit to cool off for 10 minutes in the refrigerator while you whip up heavy cream with the blender until stiff.Than slowly stir in maple syrup, vanilla and salt and melted chocolate to the bowl with heavy cream. And place in the referigerator while the cupcakes cooling off.
Spread the frosting:
Once cupcakes are cooled, spread on the frosting!
For the chocolate cupcakes, I stored them in the fridge.
Having these with a no sugar added preserve is delicious as well! So get creative, be healthy, and enjoy!
I decorated with melted chocolate design which is easy to make. Melt little bit of chocolate and let if cool off for couple minutes. Add wax paper to the baking sheet. You can use squeeze bottles or just plastic bag with cut off end, and add melted chocolate and make any design you like. Then place it to the freezer for couple minutes to freeze.
Note add the design when you serve, because the chocolate melting fast. Or place it in the refrigerator.
