For this dish I used chicken thighs. The meat came out very tender and delicious!
2 pieces chicken thighs
1 big onion
3 tablespoons coconut aminos sauce
2 tablespoons sesame oil
2 cloves of garlic
2 tablespoons tapioca starch or arrowroot starch (optional)
1 tablespoon water
3 tablespoons coconut oil
salt and pepper to taste
I heat up my wok (or you can use pan). Add coconut oil. Chopped the vegetables. On the medium heated wok add chopped onions. After onions become soft, add your carrots cut in strips. Stir it. In about 2 minutes add your chicken cut in strips. Mix it with veggies. Let it stir fry for 5 minutes. While it’s stir frying, make your thickener in a small bowl with 1 tablespoons of water and while stirring add 2 tablespoons of your choice starch. Add your thickener, coconut aminos sauce, sesame oil and chopped garlic to chicken. Stir it. Taste it. Than add pepper and salt. Remember that coconut aminos sauce already salty so don’t over salt it!
