gluten free chocolate cake


ingredients for batter:

¾ cup coconut flour, (make sure it’s sifted, so your flour won’t be clumpy!)
¼ cup cocoa powder
1 teaspoon sea salt
1 teaspoon baking soda
10 eggs
1 cup coconut oil
1 ½ cups honey
1 tablespoon vanilla extract
¼ teaspoon orange zest

preparations:

  • In a small bowl combine flour, cacao, salt and baking soda
  • In a large bowl using an electric hand mixer, blend eggs, coconut oil, honey, vanilla and orange zest
  • Add dry ingredients into large bowl and continue to blend
  • Oil (2) 9 inch round cake pans and dust with coconut flour
  • Pour batter into pans and bake at 325° for 35-40 minutes
  • Remove from oven, allow to cool completely then remove from pans

I used two kinds of frosting so it won’t be too chocolaty! If you prefer more chocolaty or coconut frosting, use one of the recipes below:

Vegan Chocolate Frosting

ingredients:

1 cup dark chocolate chips 73% cacao
½ cup coconut oil
2 tablespoons honey
1 tablespoon vanilla extract
pinch sea salt

preparations:

  • In a small saucepan over very low heat, melt chocolate and olive oil
  • Stir in honey, vanilla and salt
  • Place frosting in freezer for 15 minutes to cool
  • Remove from freezer and whip frosting with a hand blender until it is thick and fluffy
  • Frost over cake.

 

Coconut Cream Frosting

ingredients:

1 cup coconut milk
1 cup honey
pinch celtic sea salt
5 teaspoons tapioca starch
1 tablespoon water
1¼ cup coconut oil

preparations:

  • In a medium saucepan, heat coconut milk, honey and salt, simmer for 10 minutes
  • In a small bowl, combine tapioca starch and water to form a smooth paste
  • Pour tapioca starch to mixture into saucepan
  • Mix contents of saucepan with a hand blender. Whisk vigorously to combine, then bring to a boil, briefly, until shiny
  • Remove pot from heat and very gradually blend in coconut oil
  • Allow pot to cool for 10 minutes
  • Place pot in refrigerator for 30-40 minutes, until frosting solidifies and turns white
  • Remove from refrigerator and blend again, until fluffy
  • Spread over cake.
  • Frost and serve.
