Cream of broccoli chicken soup is awesome for cold weather like this. We enjoy it every time I make it.
2 tablespoons ghee or butter
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped scallions (green onions)
2 cups chicken broth
2 cups coconut milk
12 ounces cubed cooked chicken
4 cups fresh or frozen chopped broccoli (two 10-ounce packages), thawed and drained
1 teaspoon fresh or dried basil
1/2 teaspoon salt
1/4 teaspoon white pepper
In large saucepan melt ghee or coconut oil then add onion, celery, and scallions. Cook over medium-high heat, stirring occasionally, 3 minutes.
Add remaining ingredients and 2 cups water. Bring to a boil; reduce heat; cover partially and simmer 20 minutes. Ladle evenly into 8 soup bowls.
