crispy coconut chicken

Made first time this coconut chicken today.  What a delicious, crispy, flavorful dish!  i will be making this dish for sure in near future!



3 whole chicken breast, sliced in strips

3 tablespoons butter, melted

2 eggs, beaten and put in a large ziploc bag

4 tablespoons coconut flour, spread on place for dipping the chicken

coconut flakes, as much as you prefer, for dipping the chicken



Preheat the oven 350 degrees.  Butter the pan.  Toss the chicken strips in the large ziploc bag with egg beaten, and mix it all together.  Remove the chicken than first dip it in coconut flour both sides.  After you finished dipping all the chicken put it back into ziploc bag and dip into eggs again.  Than remove chicken from bag and dip it into coconut flakes and put it into your pan.  Pour over your chicken melted butter for richer taste and put it in the oven to bake on 370 degrees about 30 minutes.  Than switch it to broil on 370 degrees for another 20 minutes.  Make sure you check it constantly on the chicken to get best results.  After it’s done baking, serve immediately.

Tip:  If you want it more crispy crust than repeat the whole procedure once or twice.

I’ve made this chicken with a side of seasoned onion, carrots and garlic. My husband and I just loved it!
