gluten free “coconut cream pie”

My husband and I enjoy coconut in our baking. So I decided to make this pie.

ingredients for pie:

1 cup whipped coconut cream

1 teaspoon of vanilla extract

3 tablespoons honey

1/2 cup almond flour

preparations for pie:

Preheat the oven to 320 degrees.  Blend well all ingredients in mixing bowl.  Grease pie dish with butter or coconut oil and pour the mixture in.  Bake it for 35-40 minutes.  (It’s ready when going golden and puffy on top and the surface doesn’t wobble when shaken.)  Cool off the pie and apply cream on top with coconut flakes.

ingredients for coconut whipping cream: 1 can full fat coconut milk (I use “Thai Kitchen” brand that I buy at Walmart for a good price) 1/2 teaspoon vanilla for flavor. coconut for decorations

preparations for whipping cream:

Remove coconut milk from the can to your mixing bowl.  And mix your fruit or flavor to coconut milk.  Using whisker or mixer.  Mix it to your desired consistency.
