This dish gives you that warm, home feeling. It came out to taste just wonderful! Lot’s of flavors like garlic, rosemary and garam masala spice, onions. Wanted to share it with you, and hope you enjoy it as well as we did 🙂
8 chicken thighs, chopped in small cubes(around 2 pounds)
2 purple onions, chopped in small cubes
1 yam, chopped in small cubes
1 small fresh ginger, grated
10 garlic cloves, sliced or chopped (up to you)
2 tablespoons garam masala spice (you can buy it at any store)
1/2 teaspoon rosemary fresh, chopped or dry
1 lemon (squeeze the juice)
1/4 cup olive oil (or more as desired)
salt and pepper to taste
Preheat oven to 420 degrees.
In a mixing bowl mix chicken with garlic, garam masala spice, ginger, olive oil, lemon juice, rosemary, salt and pepper. Mix it well together. Place chicken pieces in a lightly oiled baking dish. On top add layer of onions and another layer of yams. Bake it for 1 hour. Serve immediately.
