almond pancakes


This was my first time making pancakes using almond flour.  I was amazed how good they turn out! Just delicious!  Just need to watch it, make sure it doesn’t burn.

ingredients:

1 cup almond flour

3 eggs

1/4 cup egg white

1 tsp vanilla extract

1 teaspoon honey (optional + non paleo)

1/4 cup water

1 tsp. cinnamon

preparations:

Mix all ingredients in large bowl. Heat pan on medium on the stove with dollop of olive oil. Cook pancakes for about 3 minutes on each side – careful because they can burn quick!

This recipe makes about 6 medium sized pancakes.

Top with strawberries, blueberries, or your favourite fresh fruit.
