turkey meatball soup


This week I wanted to eat some dish with  meatballs.  So I decided to create something like meatball soup.  And it came out that I really like that combination with coconut milk and veggies stalk.  Delicious and full of delicious flavors.

Ingredients for stalk:
2 cups water, boiled
1 can coconut milk
1 carrot, shredded
1 onion, chopped
1 garlic clove, minced
heap of chopped cilantro (optional)
salt and pepper to taste
Ingredients for meatballs:
1 pound ground turkey (or any other meat you like)
1 medium onion, chopped
1 garlic clove, minced
pinch of ground coriander seed
1 egg
garlic salt to taste
Preparations:
  1. Bring 2 cups of water to boil in a large saucepan.
  2. Add coconut milk, shredded carrot, 1 onion chopped and minced garlic.  Cook it for about 10 minutes.
  3. While it’s cooking prepare your meatballs for cooking. In a large bowl combine ground turkey, 1 medium chopped onion, 1 egg and 1 minced garlic. The mixture should be pretty moist but still hold it’s shape if rolled into meatballs.
  4. Shape into meatballs and add it to the soup.
  5. Cook it all together for about 30 minutes on medium heat.
  6. In the end add salt and pepper to taste.  Also can add chopped cilantro if you like.
