Got inspired by one of the paleo websites and decided to make these “zucchini pancakes”. And of course added and twisted for more kick and flavor ingredients like dill and garlic. Yum!!!
– Grate zucchini into a medium bowl. Mix well with salt and pepper. Let it sit for couple minutes to release the juices. Squeeze all access juices.
– Finely chop 2-3 green onion and mix with the zucchini.
– Combine 3 large egg into the bowl and mix thoroughly adding dill, garlic, salt and pepper to taste.
Spoon three mounds of the zucchini mixture into the pan and fry until lightly browned, pressing down to flatten. Flip and while second side is browning.
