raw key lime pie

Found this recipe online. It’s a perfect summer pie. Sweet, creamy, light and fruity. It’s uncooked raw pie, no sugar besides the natural sweeteners of your choice. I love the crust part as much as the filling. It’s nice and chewy mix of nuts and the filling it’s amazing after you freeze it in the freezer. Enjoy it my friends!

Ingredients for crust:

1 cup raw macadamia nuts

1 cup raw pecans nuts

1 cup brazilian nuts

1 cup raw hazelnuts

5 dates (remove pits)

pinch of salt

Preparations for crust:
To make crust, process mix of nuts or in the food processor until they form a fine meal. Add the dates and salt and continue until the nuts form a wall on the side of the food processor. Empty into a pie pan and firmly press crust into place and place in the freezer while you prepare the Key Lime Filling.

Key Lime Filling:

1/2 cup Lime juice
1 can full fat Coconut milk
1/2 cup Stevia or any other sweetener you prefer
1/2 cup Coconut Oil, melted
1 tablespoon Lime zest

Preparations for pie filling:

To make the filling, add all the ingredients in a blender and blend until smooth and fluid. Pour into the Nut Crust and freeze about 1-2 hours or more. To serve top with a little shredded lime zest.

  1. Key Lime is my favorite, am I missing something? Just coconut oil and lime juice, No eggs or cream? I don’t understand where the filling gets it’s body from. I will make this as soon as I hear from you, can’t wait to try it.

  2. That looks wonderful! Do you store it in the freezer or does it set up and keep well in the fridge? Have you tried making it with coconut cream instead?

    • I havent tried to make it with coconut cream yet. I will in future. Also I keep this pie in the freezer before I serve it and put back in freezer (if you have leftovers) It can stay good there for a week or two

  3. This looks awesome! Do you store it in the freezer and always serve frozen, or does it set up and keep in the fridge? How long does it stay fresh?
