I wanted some seafood so bought flounder fillets couple days ago. And was looking for a good recipe. Found one online very simple one (to which of course I added my own ingredients). If you love fish, you will enjoy this dish. I can eat this every day!
1 pound flounder fillets
1 tablespoon lemon juice
1/4 cup coconut milk
3 tablespoons homemade mayonnaise
3 tablespoons chopped green onion
3 tablespoons butter or coconut oil, melted
Paprika to taste
Place fish fillets in a glass baking dish greased with coconut oil or butter. Brush with lemon juice. Broil fish for 5 to 7 minutes or until fish is opaque throughout.
In small bowl, combine coconut milk, mayonnaise, green onions and butter or coconut oil. Remove fish from heat and spread with coconut milk mixture. Broil 2 more minutes or until lightly browned.
You can eat this fish with the side of veggies.
