If you love bisque soups as much as I do, than you will enjoy this wonderful soup.
One large head of fresh cauliflower
1 medium onion, chopped
1 tablespoon celery seed
2 bay leaves
1 green or purple bell pepper, chopped
32 ounces chicken stock or beef stuck (either one taste yummy)
16 ounces of water
1 can coconut oil full fat
2 tablespoons of oil
2 tablespoons of coconut oil or butter
Salt and pepper
Heat oil in a five quart stock pot and add onion. Sauté until onions little brown. But not burnt. Add coconut milk, chicken or beef stock, water, celery seed and bay leaves. Bring to a boil and lower to medium heat. Add cauliflower and cook until tender. When cauliflower is tender put it all in blender or just mix it with hand blender. Blend well like baby food. Add blended cauliflower mixture back to pot and stir. Add salt and pepper. Simmer for about 10 more minutes. Allow it to cook down it or eat it hot.
