homemade bison jerky


I decided to use my moms recipe.  She always makes jerky from different kinds of meat which I enjoy.  This recipe is a keeper.  Super easy to make.  Great protein on the go!

Ingredients:
1 lb ground bison (or beef, turkey, chicken)
1 teaspoon Coconut aminos
2 grated garlic (or you can add more if you love garlic flavor)
1/3 teaspoon dried cilantro
1/3 teaspoon oregano
pinch cayenne pepper
Sea salt and black pepper to taste (taste it to make sure it’s not too salty)

Instructions: 
Marinate grounded bison at least 6 hours or overnight in this mix. You can be creative and add any other dried herbs you like.
Roll the mixture into as much of a rectangle as you can to about 1/4 of an inch thickness and spread it on your baking sheet.

Place the sheet pan on the middle shelf of your oven set at 170 degrees. Bake for 8 to 12 hours with the door ajar. In the middle of that time flip the jerky meat to another side.

You now have bison jerky. Remove from the oven and cut into strips with scissors while it’s still warm.

  1. Please include amounts to “your” taste. Since I’ve never made this or any other jerky, I don’t yet know how much of any of these ingredients would suit my taste (a teaspoon or tablespoon or a cup of aminos — whatever they are.) How much is too much salt? If we already knew how much of what to include, we wouldn’t need to read a recipe. Thanks. : )
