This delicious soup reminds me of my mom. I missed her so much by the way! She lives in Alaska. Way far away. Well anyways, she used to make it usually in winter time when it’s dark and cold, cloudy outside. It was so perfect and delicious 🙂
1 (3 pound) whole chicken
4 carrots, halved
4 stalks celery, halved
1 large onion, halved
4 cloves garlic, minced
water to cover
salt and pepper to taste
1/4 cup chopped green onions (optional)
1 medium sweet potato, cubed
Place the chicken, in a large soup pot and cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).
Cook it for 12- 24 hours on slowest heat. Take chicken out of the pot. Strain the broth. Pick the meat off of the bones. Add carrots, celery, sweet potato, garlic and onion.
Cook it for about 20 minutes on medium high heat. Return the chicken, And cook it for couple minutes on medium heat. Season the broth with salt/pepper.
And it’s ready to serve with chopped green onions (optional).
