Fried Eggplant

My Filipino friend shared this wonderfully simple and healthy recipe with me last night. I decided to give it a go today.  And I tell you the eggplants dipped in beaten eggs and fried in palm oil just melts in your mouth.  I’m definitely making this again! Enjoy it 🙂



  • 2 tablespoons coconut or palm oil
  • 1 large eggplant, peeled and sliced
  • 3 eggs, beaten



  1. Heat oil in a large skillet over medium-high heat. Eggplant in thin slices.  Dip eggplant slices in egg and place in hot oil. Fry 2 to 3 minutes on each side, or until golden brown. Drain on paper towels.
