Almond Flour Blueberry Muffins

Since my husband Russ and I love blueberry muffins, I decided to bake a batch tonight.  The muffins came out moist from blueberries and delicious. It was great success! Because not only my husband enjoyed them but also all the friends that came to visit really like them.  I decided to share with the recipe with you guys 🙂



  • 1 1/2 cup almond flour
  • 2 eggs
  • 2 egg whites
  • 1/4 cup honey or maple syrup
  • 1 teaspoon Baking Soda
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter or coconut oil
  • 2 cups blueberries
  • dash of salt





Pre-heat oven to 350 degrees.  Mix all ingredients well excluding blueberries in mixing bowl.  Once completely mixed fold in blueberries. Spray muffin tin or mini muffin tin with a healthy, non-stick cooking spray.  Evenly scoop batter into muffin tin. Bake for 25 minutes.  Remove from oven and place on cooling rack.

    • I’m sure it will work with coconut flour but it will be different measurements as almond flour. Since coconut flour absorbs liquid way more. I didn’t try it making it with coconut flour yet.
