Favorite Chocolate Chip Cookies


Decided to give it a go to a new recipe for chocolate chip cookies and try to make it taste like original, and it is so very close to taste like it. My friends and hubby really enjoyed it. One of the feedbacks we’re “These are some good chocolate chip cookies”. And my friends didn’t even know that is grain free cookies 🙂

Ingredients:

1 cup blanched almond flour

1/4 coconut flour

4 tablespoons tapioca starch

1/2 cup butter, melted

4 eggs

1 teaspoon baking soda

1/2 teaspoon sea salt

1/4 cup honey or other sweeteners you prefer

2 teaspoons vanilla extract

1/2 cup chocolate chips or more if you like

Instructions:

Preheat the oven to 350 degrees and adjust rack to middle position. Place almond flour, coconut flour, tapioca starch, baking soda and sea salt in a medium mixing bowl. Mix it well together.

Whisk butter, eggs, honey and vanilla in a large measuring cup and pour into dry mixture. Stir until a dough forms. Stir in chocolate chips. Using a cookie scoop or ice cream scoop, scoop the dough and place each dough ball on a baking sheet lined with parchment paper. Press each dough ball down so the diameter of the cookie is now 3 inches. Bake for 12 minutes just until golden brown on the edges.

Cool for 5 minutes on cooling rack.
