Chicken Tomato Basil Stew

Last night I wanted to try new chicken dish that is juicy and full of flavors at the same time. And I came up with this ingredients (since these were available for me at my kitchen).  Turn out to be the most delicious Chicken Tomato Basil Stew.  Hope you enjoy it as much as we did 🙂



2 lb chicken thighs, cut in cubes

23 oz tomato, chunky

1 lb mushrooms, thinly sliced

1 large red onion, chopped

2 medium carrots, chopped

4 cloves garlic, chopped

1 large sweet potato, chopped in cubes

1 handful fresh chopped basil or 1 tablespoon dry basil

1 handful fresh chopped parsley or 1 tablespoon dry parsley

1 teaspoon celery seeds

1 tablespoon organic no-salt seasoning from costco (optional)

bacon bits (for garnishing, optional)


Tip: You will start with full crock pot of meat and veggies and in the end of cooking it will go down to by half.  It will feed a lot of people 🙂



Cut meat in cubes and add it to the crock. Chop the rest of vegetables and open canned chunky tomatoes add it to the crock pot. Cook on low for 8 hours. Easy peasy 🙂
