Lately, I am in the mood for crock pot dinners. They are just delicious and healthy and just good for the soul! Came up with this recipe this morning. My husband asked for seconds 🙂
2 lb chicken thighs, cut in cubes
1 cup chicken stock
1 large red onion, chopped
2 medium carrots, chopped
6 cloves garlic, chopped
2 large sweet potato, chopped in cubes
1 handful fresh chopped basil or 1 tablespoon dry basil
1 handful fresh chopped thyme or 1 tablespoon dry thyme
1 teaspoon celery stick
1 tablespoon organic no-salt seasoning from costco (optional)
Tip: You can add kelp noodles to this dish. It’s perfect combination. But totally optional.
Cut meat in cubes and add it to the crock. Chop the rest of vegetables and chicken stock add it to the crock pot. Cook on low for 8 hours.
