Gluten Free “Mini Garlic Rolls”


I was blown away how delicious these little rolls came out to taste!  Crunchy on the outside and soft on the inside. Just perfect! Recipe adapted from A Girl Worth Saving.  I’ll be making more soon 🙂  P.S. I modified the original recipe to my own liking and loved the way they turn out!

 

Gluten Free Mini Garlic Rolls

Gluten Free Mini Garlic Rolls

Ingredients: 

1/2 cup olive oil

1/2 cup water

1 egg

3/4 cup tapioca flour

1/4 cup coconut flour

pinch of salt

1 garlic, minced (optional)

1/2 teaspoon baking soda

1/2 teaspoon cream of tartar

Instructions:

Preheat oven to 350 degrees.  In small pot bring to boil olive oil, water and salt.  Add garlic,  tapioca flour, baking soda and cream of tartar.  Mix it well for 1 minutes. Then let it rest for 5 minutes. Add egg, coconut flour. Knead dough for a minute really well. By this time your hands will be sticky from dough add little olive oil and start pinching about teaspoon size dough and forming it  into balls. Place them on the baking sheet that is greased with butter or oil of your choice. Bake it for 35 minutes.

  1. You can substitute arrowroot powder (flour) for tapioca flour it does the same thing however arrowroot powder is a little less common to find and a lot more expensive than tapioca

    • I personally find that with tapioca flour this recipe does not taste the same. So it doesn’t do the same. Since tapioca and arrowroot flour are slight different.

    • Yes, tapioca usually consistency sticky when you add it with liquids. That’s why I usually add olive oil to my hands when I work with tapioca flour and try to form into rolls or bread. Hope this tip helps!

    • I too had the same thing happen. I heated the oil, water and salt together until boiling. I removed the pan from the heat and added garlic and then the tapicoa flour, it cooked the tapicoa and all the mixing in the world did not help. The oil seperated and it was a mess. Is the water to be hot when tapicoa is added?

      • Maybe this video tutorial will help you to get the basics of it. I watched it before I’ve made my first batch and it was easy! I’m visual! Have to see it then it’s easy to make!

  3. Can I use extra tapioca flour instead of coconut flour? Its like impossible to find here so that’s all I have. And almond flour

  4. Followed the recipe exactly and so far it’s a flop. They look like garlic cookies! 🙂 I had to add about 1/4 c extra coconut flour cuz you can’t knead liquid! Mixture was still to thin to knead but I could at least spoon it onto the pan. What did I do wrong???
