We love creamy and saucy dishes, so that’s the main reason why I created this recipe last night. It’s not hard to make and its delicious. The hardest part is chop everything 🙂
8 chicken thighs, or 4 chicken breast, chopped into cubes
1 can diced tomatoes
1 large sweet potatoes, cut into cubes
2 small onions, chopped or one large one
2 medium carrots, cut in cubes
10 garlic cloves, roughly chopped
1/2 jalapeño pepper, chopped roughly (add more if you like it very spicy)
2 tablespoon ketchup or tomato paste
1 heaping arrowroot starch or non gmo corn starch (I personally prefer non gmo corn starch)
1 tablespoon olive oil or fat of your choice
fresh cilantro, chopped
1 teaspoon pepper flakes
salt and pepper
Preheat oven to 350 degrees.
In a large bowl, mix it well all the ingredients except arrowroot starch or non gmo corn starch. Transfer into baking dish. Bake for 1 hour covered with foil. Occasionally mix it well.
In a cup add one heaping tablespoon arrowroot starch or non gmo corn starch with 1/2 cup cold water.
In last couple of minutes add the arrowroot or non gmo corn starch mixture into the baking dish and mix it well. And bake it for one minute. Take it out and mix it very well for about one minute, so it get nice and perfect creamy texture.
