Here’s some benefits of sweet potatoes

3 medium sweet potatoes, cut into wedges
1 tablespoon coconut oil
1 clove garlic, minced
salt and pepper to taste
Preheat oven to 360 degrees.
Peel sweet potatoes; cut each lengthwise into 12 wedges. In medium cooking pot add potatoes then fill it with water to completely cover sweet potatoes. Let is sit in water for about 30 minutes up to 1 hour.
Then boil sweet potatoes for 10-15 minutes that way sweet potatoes will be moist inside. Drain water completely.
And combine sweet potato wedges and remaining ingredients in a large bowl, toss gently to coat. Place wedges in a single layer on a baking sheet; bake for 30-45 minutes on each side until crispy on the outside and chewy on the inside.
