I decided to make the healthy version of “Almond Joy” bars without the extra junk . And also added peppermint extract for that extra kick. Came out to taste quite delicious! 🙂
Ingredients:
- 1 cup coconut butter
- 2 cups coconut flakes
- small amount of honey
- few drops peppermint extract
- 2/3 cup-1 cup dark chocolate
Instructions:
Combine the first 4 ingredients in the blender. Shape them into patties using teaspoon. Then place them on parchment/wax covered paper on the baking sheet.
Freeze it for 10 minutes.
Meanwhile, melt dark chocolate in small pot on super low heat. Dip the mints into chocolate covering thoroughly. Place back on baking sheet. You can also add almond on top of each patties. (optional)
Freeze for 15 more minutes.
Enjoy!

I did! I used 2T of almond extract for the batch, I forgot about adding the single almond on top, but I’ll try it next time. They were delicious! A favorite for non-paleo folks too!
