Protein Balls Stuffed With Peppers And Cheese (Low Carb High Fat)


I saw idea of this recipe somewhere and I can’t seem to find it to credited them for it. Anyway, I’ve made couple days ago and we loved it.   Like my husband described it after he tried it “the filling taste delicious… and meat is thinly cover!!! Just right!”

Ingredients:

1 lb ground turkey

1 lb ground beef

1/4 mozzarella cheese, grated

1/4 cream cheese

1/4 havarti cheese, grated (or any other cheese of your choice)

1 onion, minced

3 garlic cloves, minced

10-15 mini bell peppers

1/2 teaspoon corriander

salt and peppers to taste

tip: you can also add any meat spices in ground meat

 

 

Instructions:

Preheat oven to 360 F.  In a mixing bowl mix ground meat with cumin, minced garlic, onion, salt and pepper. Set aside.

In a medium bowl grate cheese together and mix it with cream cheese.

Cut off stems and remove seeds from inside peppers. Blanch peppers before stuffing. To blanch peppers, bring a large pot of water to boil and have ready a bowl of ice water. Place the peppers in the boiling water for 2 minutes – set a timer so you don’t overcook them.  Using tongs, remove the peppers and plunge them in ice water to stop the cooking.

Stuff the peppers with cheese mixture.  Wrap it with layer of ground meat. Set it in greased baking sheet. Bake it for 1 hour.  Slice it and serve.

 

Enjoy with side of light salad of your choice.
